Pan-Seared Tilapia With Chili-Lime Butter

  1. Make chili-lime butter: In small bowl, stir butter, shallots, lime zest and juice, chili pepper and salt together until well-blended.
  2. Cook fish: Pat fillets dry, dust with flour and season with salt. In skillet large enough to hold all fillets without crowding, heat oil over moderately high heat until just smoking. Place fillets in skillet and cook 4-5 minutes, flipping once, until golden and just cooked through. Serve each fillet with a dollop of chili-lime butter.
