Roasted Asparagus and Sorrel

  1. Turn the oven on to 350°F and melt butter in an 8 inch casserole pan. Cut the asparagus in half lengthwise and roughly chop the sorrel.
  2. Take the pan out of the oven and add salt and pepper then add the sorrel. Mix until the sorrel is evenly coated with butter. Next, lay the asparagus on top of the sorrel and pour 1 ½ tablespoons of chive flower vinegar or lemon juice (or both) over the top.
  3. Bake for 12-15 minutes, just until the asparagus is soft.
