Fried Green Tomatoes

A summer classic.
- 2 lbs green tomatoes
- 2 eggs yolks only
- 1 cup all-purpose flour
- 1/8 cup parsley
- neutral cooking vegetable oil
- Ground black pepper and Salt to taste
- Cut the tomatoes into ½ inch slices.
- Coat the tomatoes in flour, then egg yolk, then parsley and breadcrumbs.
- Fry on medium heat until lightly browned.
