A quick and easy dish emphasizing simplicity and fall flavors.



  1. Melt butter in a large saucepan and add the garlic on a medium-low heat. Cook until garlic softens, then add white beans, mix, turn down heat, and cover.
  2. Meanwhile, cut the collards in half and then into ½ inch strips.
  3. Add the collards to the saucepan with 1 tablespoon water and cover. Stir occasionally until the collards and soft and bright green, about 5 minutes. Remove from heat and dress with lemon juice, salt and pepper.
