Buttered Collards with White Beans

A quick and easy dish emphasizing simplicity and fall flavors.
- 1 bunch collards
- 2 cups white beans cooked and drained
- 3 cloves garlic minced
- 3 tablespoons Butter
- 1 teaspoons Lemon Juice
- salt and pepper to taste
- Melt butter in a large saucepan and add the garlic on a medium-low heat. Cook until garlic softens, then add white beans, mix, turn down heat, and cover.
- Meanwhile, cut the collards in half and then into ½ inch strips.
- Add the collards to the saucepan with 1 tablespoon water and cover. Stir occasionally until the collards and soft and bright green, about 5 minutes. Remove from heat and dress with lemon juice, salt and pepper.
