CELERIAC REMOULADE
Celeriac Remoulade

Ingredients
- 1/4 cup mayonaisse 
- 1 tablespoon parsley fresh, minced 
- 2 tablespoons lemon freshly squeezed 
- 1/2 teaspoon capers 
- 1 teaspoon Dijon Mustard 
- 1 teaspoon tarragon fresh, or 1/4 tsp dry 
- 2 small celeriac peeled, cut into matchsticks 
Instructions
- In a small bowl, combine ingredients for dressing: mayonnaise, parsley, lemon juice, capers, mustard, tarragon, and salt and pepper to taste. 
- Mix until well combined. Toss with celery root. 
- Nutritional value: Celeriac is high in fiber and a good source of vitamins B6, C and K. It also contains important minerals, such as phosphorus, potassium and manganese.
