DRUNKEN GRILLED CHEESE
Drunken Grilled Cheese

Ingredients
- 1 tablespoon Olive Oil 
- 1 small onions thinly sliced 
- salt and pepper to taste 
- 1/4 cup lager or other beer 
- 4 slices bread 
- 2/3 cup cheddar cheese shredded 
- 1 tablespoon Butter 
Instructions
- Heat olive oil in a skillet over medium-low heat. Add onion and cook for ten minutes, until softened and turning golden brown, stirring frequently. 
- Add lager, salt and pepper and increase heat. Cook for 5 more minutes, until liquid is absorbed. 
- Remove from heat. Butter bread on each side. 
- Divide onions onto two slices of bread and top with cheese and remaining bread slices. 
- Wipe out skillet and return to medium-high heat. Place sandwiches in skillet and cook until browned, about 3-5 minutes on each side (depending on how toasted you like your grilled cheese).
