Ingredients

1 16 ounce package of wide egg noodles

¼ cup bacon fat, chicken fat, or leftover ham or bacon + 1 tablespoon butter

2 large onions, sliced

3 garlic cloves, chopped

½ head green cabbage, thinly sliced

1 teaspoon salt

½ teaspoon black pepper

Instructions

This version of Eastern European comfort food hails from Pittsburgh!

Cook the noodles according to package directions. Drain well.

Add fat and/or meat to a skillet over low heat. Add the onions and garlic and sauté until soft. Add cabbage, salt, pepper. Stir often. Once cabbage is softened, add the noodles and stir to mix well.
Greens substitutions: instead of cabbage, you can use kale, collards or Swiss chard, coarsely chopped.
