Sweet Potato Chocolate Cake

Ingredients

½ cup butter (1 stick)

11/2 cups sugar

2 eggs, beaten

4 cups peeled and diced sweet potatoes, cooked

2 teaspoons vanilla

2 teaspoons cinnamon

1 teaspoon salt

2 teaspoons baking soda

2 cups all-purpose flour

1 cup chopped white chocolate

1 cup walnuts, chopped, optional

Instructions

In a Kitchen Aid, with the paddle attachment, cream oil and sugar. Add beaten eggs and vanilla. Sift dry ingredients and add all at once to the mixture. Continue mixing until just combined, mixture will be somewhat crumbly. Add sweet potatoes, nuts (if using), and chocolate, and combine with a rubber spatula. Do not mix too long. Grease and flour a 9 x 13 inch pan, pour in batter and bake at 350 degrees for 45-60 minutes.
