Berry and Goat Cheese Tart
Ingredients
½ cup walnuts, ½ cup oats
½ cup whole wheat flour and ½ cup white flour
1 ½ tablespoons sugar
2 tablespoons vegetable oil
1 teaspoon walnut, hazelnut, or vegetable oil
½ cup ice water
For filling
1 cup fresh berries (strawberries, blue berries, blackberries)
5 ounces soft goat cheese
½ cup milk, ½ cup sugar
2 large eggs, 1 teaspoon lemon zest
½ teaspoon vanilla extract
2 tablespoons jam for topping tart
Instructions
First make the tart crust by combining the dry ingredients and drizzling the oil over them. Add the ice water and mix into a smooth dough. Roll the dough into a 12” circle and place into a 9” pan; trim as needed. Bake for about 10-15 minutes at 375. It will bake more once you add the filling.
Make the filling while the crust is baking: Blend the cheese, milk, sugar, eggs, lemon zest, and vanilla until smooth. Clean and dry the berries.
When the crust is cooled, spread the berries in a layer over the bottom of the crust and pour the cheese mixture over them. Bake for 45-50 minutes at 350. Cool on a wire rack.
While the tart is cooling, combine jam with 1 teaspoon of water and microwave for 30 seconds or warm over low heat until the jam is melted. Pour over tart and serve once the jam has set.
