Fried Green Tomatoes

Ingredients:

2 lbs green tomatoes

2 egg yolks

1 cup flour

1 ½ cups buttermilk

1/8 cup chopped parsley

½ cup breadcrumbs

Neutral cooking oil

Salt and pepper to taste

 

Instructions:

1. Cut the tomatoes into ½ inch slices.

2. Coat the tomatoes in flour, then egg yolk, then parsley and breadcrumbs.

3. Fry on medium heat until lightly browned.
