Peach Sorbet

SERVES: 8

TOTAL TIME: 20 min

Ingredients:

8 ripe peaches

200 g sugar*

1 tablespoon lemon juice**

*Ratio of fruit to sugar should be 4:1 based on weight

**add ½ at a time, checking for taste preference, the lemon juice brings out the peach flavor.

Instructions:

Peel and slice all the peaches; then place in the freezer and freeze until completely hard and frozen. Place frozen peaches in the bowl of a food processor, along with the sugar and process until smooth, scraping down the sides as you go. Once smooth, add lemon juice to taste. Freeze for another 5-6 hours, or until firm
