Quinoa, Fresh Fig & Honey-Balsamic Parfaits

SERVES: 4

Ingredients

1 cup water

1/2 cup quinoa, rinsed

1/4 cup balsamic vinegar

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1/8 teaspoon salt

1/4 cup honey

8 fresh figs, quartered

1 cup (8 ounces) vanilla yogurt

Instructions

In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Remove from heat; fluff with a fork.

Meanwhile, place vinegar in a small saucepan. Bring to a boil; cook 1-2 minutes or until liquid is reduced by half.

In a small bowl, mix cooked quinoa, vanilla, cinnamon and salt. Layer half the quinoa mixture, half the honey, the balsamic vinegar, half the figs and half the yogurt into 4 parfait glasses. Top with remaining quinoa mixture, honey, yogurt and figs.
